Dalrymple Pinot Noir is a blend of Pinot Noir parcels from the estate vineyard at Pipers River, as well as other Tasmanian growers in Coal River Valley, Swansea and Ouse.
Each vineyard is harvested at optimum ripeness. Fermentation begins after 2-3 days of maceration, with plunging of the cap used to extract colour and tannins from the skins.
Once the ferment is complete, the wine is pressed, settled and placed in French oak barrels for malolactic fermentation and ageing. It is filtered prior to bottling.
Brilliant red, Dalrymple Pinot Noir has rich, spicy dark fruit flavours balanced by bright acidity and fine tannins. Cellaring potential is five years.
